Ingredients
- 1/2 pink (red-fleshed) dragon fruit (or 150 g frozen pink pitaya)
- 3 scoops vanilla ice cream
- 250 ml cold milk
- 2 tbsp honey
- Juice of 1/2 lime
- A few mint leaves
- Ice cubes
- To decorate: 2 dragon fruit slices, mint
Method
- Keep two slices of dragon fruit for decoration and scoop out the rest.
- Blend dragon fruit, ice cream, milk, honey and lime juice until thick, smooth and bright pink.
- Pour into two tall glasses over a few ice cubes.
- Decorate with a dragon fruit slice and fresh mint.
🐾 SinDee’s tip: Drizzle a little honey inside the glass before pouring – it looks like golden streaks in the pink.
